The simplest way to cook broccoli in the oven (which also happens to deliver the biggest flavor bang for your convenience buck).
This recipe was originally featured in There's More to Broccoli.
1 1/2 pounds broccoli florets
1/2 cup olive oil
1 teaspoon coarse salt
1/2 teaspoon ground black pepper
1. Preheat the oven to 475 degrees with the rack in the middle position. In a medium bowl, toss the broccoli, olive oil, salt and pepper together to combine.
2. Transfer the broccoli to a roasting pan and slide it into the oven. Roast for 15-30 minutes, turning and tossing the broccoli every 10 minutes or so, allowing them to brown evenly on all sides. Broccoli is done when easily pierced with a fork.
Cooking time will vary depending on the size of your florets.
