Named "miracle" tuna by my son's elementary school friends, who said it was a "miracle" because every kid loved it - even kids who didn't like tuna!
1 can Light or Skip Jack tuna "packed in water"
2-3 Tablespoons mayonnaise
2 teaspoons Dijon mustard
Salt and pepper if needed
Optional: chopped scallions or red onions (or other type of onion)
1. Drain the water from the can of tuna and empty it into a medium bowl. Add the mayonnaise and mustard, and mix everything together with a fork.
2. Add a little pepper and salt to taste. Stir in the optional onions. Serve on bread or with crackers.
