Lemon-Blueberry Sauce

Delicious alternative to maple syrup on Homemade Pancakes, waffles or French toast.


1/3 cup water

1/3 cup sugar

2 teaspoons lemon zest (from about 1 lemon)

About 8 juicy sweet blueberries

1 very small pinch of coarse salt



1. Add all ingredients to a small saucepan over medium-high heat and whisk them together to combine.

2. As the mixture comes to a boil, use a potato masher (or whatever you have) to mash the blueberries a bit.  After the mixture starts to boil, turn the heat to medium to keep everything at a low simmer. Allow the sauce to simmer for about 8-10 minutes in order to reduce to a more syrupy consistency and concentrate the flavors.

3. Pour the sauce through a strainer set over a syrup pitcher or measuring cup (whatever you will serve the syrup in).  Press the juices from the solid pieces that remain in the strainer, then discard them. 

4. Your Lemon-Blueberry Sauce is ready!  Serve it with Homemade Pancakes, waffles or French toast, perhaps with some fresh ripe fruit strewn over everything.  If you have any left over, it should keep in the fridge for a few weeks.
