Love those Leftovers

This is America, and of course you can (and should!) microwave all the leftovers in one big bowl and eat it while watching football. But when you’re ready, you can move on, and use those leftovers to make something new. Something even (dare I say?) better (?). Or at least something you and everyone else in your house will actually look forward to.

Here are some ideas:

You’re gonna make a sandwich, so make it a good one:

The key to this sandwich is the marriage of cranberry sauce (preferably this recipe) with a schmear of medium-funky spreadable gorgonzola. Pile the turkey and other stuff on there, and you’re in good shape. Best. Sandwich. Ever.

Turn your turkey into soup:

Cannelini beans with onions, garlic, spinach and your leftover turkey, spiked with a little Sriracha.

You can make it up to 3 days ahead and store it covered in the fridge. Or make the beans ahead, then combine them with the other ingredients when you’re ready to serve.

Make something special:

You can use your leftover turkey, along with the gravy if you still have it, to make this pot pie. There are two sets of instructions: one to make it with the turkey and gravy, and the other to make it with just the turkey (it will make its own gravy). Great either way!
