Herbed Goat Cheese Spread

Goat cheese, butter and herbs combine for a delicious spread to enjoy smeared on French bread or a sandwich, or as a dip with veggies.

Ingredients

4 ounces soft goat cheese (usually sold in the shape of a log)

3 Tablespoons unsalted butter, softened

1 teaspoon chopped chives

1 teaspoon chopped fresh thyme leaves

1/8 teaspoon black pepper

A pinch of salt, if needed

Instructions

1.  Combine all ingredients in a glass bowl and mix together with a fork and/or rubber spatula.

2. If the butter and goat cheese are difficult to blend, you can leave them out in a warm place to soften, or pop the bowl into the microwave for 10 seconds to slightly soften them.  As you work, they should become easier to blend.

3. When everything is completely blended together, taste a small bit.  If it's delicious, you're done!  If you think it needs it, mix in a pinch of salt and taste again.

Serve with French bread, smeared on a sandwich or wrap such as French Pinwheels, or as a dip with veggies.
