Classic Hummus

The classic flavors of ancient civilizations, enjoyed in the Middle East for thousands of years.

Classic Hummus, with pita and a sprinkle of parsley


1/2 cup extra virgin olive oil (plus a little extra at the end)

2 Tablespoons fresh-squeezed lemon juice

3/4 teaspoon coarse salt

1/4 teaspoon cumin

1/8 teaspoon black pepper

1/4 cup tahini (well mixed)

2 cloves garlic, peeled

1 15-ounce can of chickpeas (also called "garbanzo beans")

Chopped parsley (optional, for garnish)



1.  Put the olive oil, lemon juice, salt, cumin, black pepper, tahini and garlic in a food processor (best) or blender.  Turn on the food processor briefly to mix well. 

2.  Carefully open the can of chickpeas and drain the water into a bowl.  Add 1 Tablespoon of the water to the food processor and turn it on.

3.  With the food processor running, add the chickpeas and blend them in thoroughly.  If you are using a blender, you will want to add them a bit at a time so that each portion can be fully blended before adding more.  You may need to add a bit more olive oil or water from chickpeas if the mixture gets too thick for the blender.

4.  Your Classic Hummus is ready!  You can serve it spread onto a plate (the traditional presentation), or in a dish for dipping.  Either way, drizzle a bit of olive oil on top.  You may also sprinkle chopped parsley on top. 

Serve with pita bread or veggies, or spread on a sandwich.
